A Chocolate Cake for Maman
This Mother's Day, Let Them Make a Mess
There's a moment, right before the chocolate hits the warm butter, when the kitchen goes quiet. Little eyes widen. Little noses lean in. And for about three seconds, nobody is fighting over who gets to crack the eggs.
It never lasts, of course. But that's the beauty of baking with children. It's not about perfection. It's about the sticky fingers, the cocoa powder on the dog, and the look on Maman's face when something warm, wobbly, and wonderful arrives on a plate that's far too big for it.
This Mother's Day, Pierre is sharing a simple chocolate cake recipe that your little ones can make at home. It's quick. It's forgiving. And it uses just five ingredients you probably already have in the cupboard.
We've already had our girls in the kitchen giving it a go. As you can see, most of the chocolate made it into the bowl... Most of it.
Fair warning: your kitchen will not survive unscathed.
Pierre's Chocolate Cake, Le Fondant au Chocolat
A rich, soft-centred French chocolate cake. Simple enough for small hands, indulgent enough for Maman.
Total time: 25 minutes Prep: 10 minutes | Baking: 15 minutes
Ingredients
200g dark chocolate (good quality, it makes all the difference)
100g butter
4 eggs
60g sugar
50g flour
Method
Step 1 Preheat your oven to 200°C (Gas Mark 6-7). In a saucepan, melt the chocolate and the butter (cut into small pieces) over a very low heat. Stir gently until smooth. This is the bit that smells incredible. Let the kids watch it come together.
Step 2 In a mixing bowl, add the sugar, eggs, flour and the melted chocolate. Mix well until everything is smooth and glossy.
Step 3 Butter and flour your cake tin, then pour in the batter.
Step 4 Bake for 10 to 11 minutes.
Step 5 When you take the cake out of the oven, it may not look fully baked. This is completely normal, that's what makes it fondant. Let it cool before turning it out of the tin. Resist the urge to peek too early.
Serve with a dusting of icing sugar, a handful of berries, or simply as it is. It doesn't need much. Good chocolate never does.
And if the kitchen is still standing...
This recipe is one we love for its simplicity. It's perfect for a Sunday morning with the kids, a homemade gift for someone special, or just because Tuesday needs chocolate cake.
The version we bake in our Muswell Hill workshop is a little different. A little more elaborate. A little more indulgent. Built on the same foundations, but with the kind of care and time that comes from doing this every single day.
So if you'd rather skip the mess (we completely understand), pop into the bakery this Mother's Day weekend. Whether it's our handmade chocolate cake, freshly baked croissants, a beautiful tart or any of Maman's favourites, we'll have them ready for you. Golden, warm, and wrapped with love.
You'll find us at our Muswell Hill bakery on the Broadway, or at our Holloway Road café-bakery near Highbury Corner.
Both open this weekend for collections and walk-ins.
